 Post subject: Venison Breakfast Sausage

Me and the kids made up about 40lbs of this last night. Made a small batch and loved it, so we decided to stuff the freezer.

3lbs venison
2lbs prok butt roast ( the fatter the better)
2 teaspoons ground mace ( the spice, not the spray)
2 teaspoons rubbed sage
1 tablespoon plus one teaspoon of Kosher or canning/pickling salt
2 teaspoons of granulated garlic
3 teaspoons crushed red pepper
1 cup ice water

Grind the meats through medium plate. Mix very well with water and spices. We mix it by hand in a big tub to ensure everything is evenly distributed.

I got a bunch of the venison One pound game bags off of ebay. We stuff them full and seal. Make patties for breakfast
